Orange Chocolate Cake

  • 125ml Leafyridge Olive Oil
  • Little extra Olive Oil for Pan
  • 2 Oranges
  • 1 Cup flour
  • Pinch Salt
  • ½ tsp baking powder
  • ½ tsp baking soda
  • 3 eggs
  • 1 cup sugar
  • ½ cup plain full fat yogurt
  • ¼ tsp vanilla extract
  • 1 tbsp cocoa powder

Lightly grease a 9 inch springform pan. Preheat oven to 160 degrees C. 

Grate the skin of two oranges. Squeeze the oranges until you have ½ cup juice. 

Stir all dry ingredients in a mixing bowl. 

With an electric mixer beat together the eggs, sugar and half of the grated orange peel at high speed. Beat until you have a thick yellow cake batter. 

Lower your speed and include the yoghurt, vanilla, olive oil, orange juice and the rest of the grated orange peel. Beat this until it is well mixed. Set aside ½ cup of this batter. 

Carefully add the batter to the dry ingredients and combine well. Pour this batter into your springform pan. 

Stir the cocoa powder into the half cup of batter that you set aside. 

Pour this chocolate mixture into the cake’s centre. Drag a fork through the cake so that the pattern resembles a sunburst. 

Place the cake on the centre rack of the pre heated oven and cook for 40 minutes until done. 

Serve your cake warm or cool. You’ll be surprised how good it is.
