• 6 potatoes (or as many as necessary)
• 3 tablespoons Leafyridge Extra Virgin Olive Oil
• Salt and Pepper
• All purpose seasoning
Wash potatoes and cut into chunks about 2cm square. Heat 2 tablespoons of Leafyridge Extra Virgin Olive Oil in a heavy based frying pan or saucepan on a medium heat. Place the potato chunks into the pan and toss to coat. Sprinkle with the all purpose seasoning and salt and pepper. Cook over medium heat, tossing chunks every 5min for about 20-30min. When potatoes are cooked through, drizzle over remaining Leafyridge Extra Virgin Olive Oil and toss chunks. The heat of the cooked food releases the flavour of the oil. Serve Immediately.
