09/06/15 BBQ Chicken
- Boneless skinless chicken breasts
- Leafyridge extra virgin olive oil
- Chicken spice
- Salt & pepper
Slice chicken breasts across the middle into 2 thinner pieces approx 1cm thick. Using a pastry brush wipe the chicken on both sides with olive oil. Sprinkle both sides with the chicken spice, salt and pepper according to taste. Place on a hot BBQ for about 15-20 mins each side. Remove from BBQ and place in a dish, then drizzle with a little olive oil while still hot. Serve immediately.
